Preparation
- Grab a large deep skillet and warm it over medium-high heat.
- Add the butter to the skillet and let it melt until it’s beautifully golden.
- Toss in your diced onion and sauté until they become translucent and slightly wilted, about 3-4 minutes.
- Stir in the garlic, cooking for just a minute or two.
- Pour in the Half and Half, chicken broth, salt, and pepper. Bring the mixture to a boil while stirring occasionally.
- Once boiling, add the medium shell pasta. Stir and let it simmer for about 7-8 minutes for al dente pasta.
- When the pasta is nearly cooked, mix in the parmesan cheese, chopped rotisserie chicken, and rosemary. Stir well to combine and heat everything through for a couple of minutes.
- Quickly remove the skillet from heat, sprinkle with parsley, and serve immediately.
Notes
Consider using homemade chicken broth for enhanced depth. Experiment with different cheeses like mozzarella or gouda, and add a pinch of cayenne pepper for extra spice. Fresh herbs add wonderful freshness.
