Method
Preparation of the Crust
- In a medium bowl, combine the finely crushed graham cracker crumbs and melted butter. Use a fork to blend them together until fully combined.
- Press this crumb mixture into the bottom and up the sides of a 9-inch pie plate, ensuring it is evenly distributed.
- Chill the crust in the refrigerator for 30 minutes to firm up.
Make the Cheesecake Filling
- In another medium bowl, use a mixer to beat the room temperature cream cheese, sugar, milk, and vanilla extract until smooth and well-blended.
- Spread this creamy mixture evenly over the prepared pie crust, smoothing the top with a spatula.
Prepare the Strawberry Topping
- In a medium saucepan, whisk together the sugar, water, cornstarch, and a pinch of salt over medium heat.
- Cook the mixture, stirring continuously, until it becomes clear and thick, then remove it from heat.
- Gradually add the strawberry gelatin, stirring until dissolved completely. Allow this mixture to cool to room temperature.
Assemble the Pie
- Once the gelatin mixture has cooled, gently stir in the sliced fresh strawberries, coating them in the sweet glaze.
- Pour this strawberry mixture over the cheesecake layer in the pie crust.
Chill and Set
- Cover the pie with plastic wrap or a lid and refrigerate it until set, which should take about 2 hours.
- Once it’s firm, slice and serve your No-Bake Strawberry Cheesecake Pie!
Notes
To achieve a smoother filling, ensure that the cream cheese is at room temperature before mixing. You can add pureed fresh strawberries into the cheesecake filling for a stronger strawberry flavor. Experiment with different fruits like blueberries or raspberries for a mixed berry topping.
