Ingredients

Main Ingredients
  • 6 slices medium slices of White Bread Soft farmhouse bread or sourdough for a tangy flavor.
  • 1 lb Mushrooms, sliced A mixture of shiitake, cremini, or button mushrooms.
  • 1/4 cup Cream or Milk Adds creaminess to the mushrooms.
  • 3.5 oz Cream Cheese Provides a rich, creamy texture.
  • 3.5 oz Gruyere, grated Adds a nutty and slightly sweet flavor.
  • 3 slices Emmental cheese For gooeyness and mild flavor.
  • 2 tbsp Butter For golden, crispy crust.
  • 1-2 cloves Garlic, finely diced/minced Adds aromatic depth.
  • 1 tsp Fresh Thyme Leaves, finely diced Herb complementing the mushrooms.
  • Salt & Black Pepper, to taste Essential for seasoning.

Method

Prepare the Mushrooms
  1. Melt 1 tbsp of butter in a large pan over medium heat. Add half of the sliced mushrooms.
  2. Fry the mushrooms without moving until golden brown on one side. Flip and cook until golden on the other side. Remove and repeat with remaining mushrooms.
Make Creamy Mushrooms
  1. In the same pan, return all the mushrooms, adding minced garlic and seasoning with salt and pepper. Sauté for 1-2 minutes until garlic is lightly browned.
  2. Mix in cream cheese, followed by cream or milk, and thyme. Stir until cream cheese melts and mixture is creamy. Set aside.
Assemble the Sandwich
  1. Heat a clean pan over medium heat, spread butter on one side of 1-2 slices of bread, and place them butter-side down.
  2. Layer with Emmental cheese, mushroom mixture, Gruyere, and cover with another slice of bread butter-side up. Spread more butter on top.
Cook the Sandwich
  1. Cook the sandwich for about 3-4 minutes until both sides are golden brown and cheese has melted. Remove and repeat with remaining sandwiches.

Notes

For extra flavor, consider adding a splash of lemon juice to the mushroom filling or using a combination of cheeses such as sharp cheddar for more complexity.
