Ingredients

For the Cookie Dough
  • ½ cup unsalted butter, softened providing a creamy base
  • ½ cup granulated sugar for that signature sweetness
  • ½ cup powdered sugar adding a whimsical touch to the cookie's texture
  • ½ cup canola or vegetable oil to ensure a tender, moist cookie
  • 1¼ teaspoons pure vanilla extract for a warm, aromatic flavor
  • ¼ teaspoon almond extract elevating the flavor with a nutty sweetness
  • 1 large egg binding the ingredients together
  • 2⅓ cups all-purpose flour spooned and leveled for precision
  • ¾ teaspoon baking soda helping the cookies rise perfectly
  • ¾ teaspoon cream of tartar ensuring a soft and tender cookie
  • ½ teaspoon salt to balance the sweetness
  • ¾ cup granulated sugar, divided for rolling and sprinkling

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line three baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and powdered sugar together using an electric mixer until well combined.
  3. Add the canola or vegetable oil, mixing until fully incorporated. Then, introduce the egg along with the vanilla and almond extracts.
  4. In a separate bowl, combine the flour, baking soda, cream of tartar, and salt. Whisk together until well mixed, then add this dry mixture to the wet ingredients and beat until just combined.
Cookie Formation
  1. Reserve ¼ cup of sugar for topping the baked cookies. Transfer ½ cup of sugar into a flat container for rolling the dough balls.
  2. Scoop the dough into 2-teaspoon portions and drop them into the sugar container, working in batches of 8-10 at a time.
  3. Coat the dough balls in sugar and place them on the prepared baking sheets, leaving space between each for spreading.
  4. Flatten each dough ball slightly to help with even baking.
Baking
  1. Bake in the preheated oven for 9-12 minutes until they puff up and begin to set around the edges.
  2. Sprinkle the tops of the cookies with reserved sugar while they are still warm and allow them to cool completely on wire racks.

Notes

Chill the dough for 30 minutes if it's too soft. Consider adding colorful sprinkles or citrus zest for variations.
