Ingredients

For the bento box
  • 1 cup Hummus (homemade or store-bought) This smooth and creamy spread is not only nutritious but also adds a depth of flavor.
  • 4-8 pieces Falafel (optional) These crispy, golden-brown chickpea patties bring a wonderful crunch and hearty protein.
  • 1 cup Cucumber (sliced) Fresh and juicy, adds a refreshing crunch.
  • 1 cup Cherry or Grape Tomatoes Bursting with flavor and provide a beautiful pop of color.
  • 1/2 cup Olives Salty, briny bites complement the other ingredients.
  • 2 tablespoons Feta Cheese (optional) For a touch of creaminess and tangy kick.
  • 1 whole Whole Wheat Pita (cut into wedges) Perfect for scooping up all the delicious contents.

Method

Preparation
  1. Prepare your containers by placing 1/4 cup portions of hummus into each container.
  2. Divide the cucumber slices, cherry or grape tomatoes, olives, and feta cheese evenly into each container.
  3. Cut your whole wheat pita into 8 wedges and place 2 slices in each container.
  4. Add 1-2 pieces of falafel to each container if using.
  5. Cover each container with a lid and refrigerate. These bento boxes can be stored for up to 4 days.

Notes

Customize your hummus with herbs or spices for extra flavor. Make it vegan by skipping the feta. Add colorful veggies for more variety.
