Ingredients

Dry Ingredients
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1/4 cup cane sugar
  • 1/4 cup brown sugar, packed
  • 1/2 teaspoon cinnamon
Wet Ingredients
  • 12 tablespoons cold butter, cubed Use cold butter for a flaky texture.
  • 1 egg
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 4 tablespoons maple syrup
Additions
  • 1 cup pecans, chopped For crunch, consider toasting before adding.
Glaze
  • 1/2 cup powdered sugar Or approximately 60 grams.
  • 2 tablespoons maple syrup
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon water

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, stir together all-purpose flour, baking powder, kosher salt, cane sugar, brown sugar, and cinnamon.
  3. Incorporate cold butter into the dry mixture until it resembles coarse crumbs.
  4. In a small bowl, whisk together the egg, heavy cream, milk, and maple syrup until well combined.
  5. Pour wet ingredients into dry ingredients and mix gently until almost combined, avoiding overmixing.
  6. Dump the shaggy dough onto a floured countertop and form it into a disc shape about 1.5 inches thick. Fold the dough five times, sprinkling in pecans during folds.
  7. Cut the disc into 8 equal scones and place on a parchment-lined baking sheet.
Baking
  1. Bake in the preheated oven for approximately 22 minutes or until golden brown.
  2. Let the scones cool on a wire rack.
Glazing
  1. Mix together powdered sugar, maple syrup, vanilla extract, and water to create a glaze. Drizzle over cooled scones.

Notes

For best results, use cold butter and consider toasting the pecans beforehand. You can experiment with spices like nutmeg or substitute some flour with whole wheat flour for a nuttier flavor.
