Ingredients

For the marinade
  • 1 tablespoon lemon zest Adds a vibrant citrus aroma and enhances the overall flavor.
  • 2 tablespoons fresh lemon juice Brightens the dish and tenderizes the chicken.
  • 2 tablespoons extra virgin olive oil Provides a rich texture while infusing a fruity essence.
  • 2 tablespoons nonfat Greek yogurt Contributes creaminess to the marinade.
  • 3 cloves garlic, minced (about 1 tablespoon) Adds aromatic depth.
  • 2 tablespoons finely chopped fresh herbs A mix of basil and parsley offers freshness.
  • 0.5 teaspoon salt Enhances the overall flavor profile.
  • 0.25 teaspoon ground black pepper Introduces subtle spice.
Main ingredient
  • 1.25 lbs boneless, skinless chicken breast The star of the recipe.

Method

Preparation
  1. In a medium bowl, whisk together the lemon zest, lemon juice, olive oil, Greek yogurt, minced garlic, chopped herbs, salt, and black pepper.
  2. Pour the marinade into a gallon-sized plastic bag. Add the chicken breasts and press out as much air as possible before sealing.
  3. Refrigerate for at least 30 minutes, or up to 1 day for maximum flavor, flipping the bag halfway through.
Grilling
  1. Preheat your gas grill with all burners set to high for about 15 minutes. Turn the two burners closest to the front to low while keeping the back burner on high.
  2. Remove the marinated chicken from the bag and place on the grill over the low heat burners. Cover the grill and cook until the underside begins to develop grill marks, approximately 6 to 9 minutes.
  3. Flip the chicken, cover, and cook until firm to the touch, about 6 to 9 minutes longer.
  4. For a char, move the chicken to the high flames area and cook uncovered until both sides have solid grill marks, about 5 to 6 minutes.
  5. Ensure the chicken registers 160 degrees Fahrenheit on an instant-read thermometer.
Finishing Touch
  1. Transfer the chicken to a plate, tent with foil, and rest for 5 minutes before serving.

Notes

For even more flavor, marinate the chicken overnight. Feel free to experiment with other fresh herbs. If using charcoal, ensure even heat cooking.
