Preparation
- In a small bowl, whisk together the soy sauce, honey, lime juice and zest, minced garlic, green onions, sesame oil, and avocado oil until well blended.
- Pour the marinade over the chicken drumsticks, ensuring every piece is evenly coated. For maximum flavor infusion, transfer the drumsticks and marinade to a resealable plastic bag.
- Place the marinated chicken in the refrigerator for at least 1 hour, ideally overnight.
Cooking
- Preheat your oven to 400°F (200°C).
- Lay the marinated chicken drumsticks in a baking dish in a single layer, pouring any remaining marinade on top.
- Bake the chicken for about 1 hour, flipping the pieces halfway through. Use a meat thermometer to check that the internal temperature reaches 180-185°F.
- For crispy skin, turn on the broiler for the final 3-4 minutes of cooking, keeping a close eye to avoid burning.
Notes
Marinating overnight is highly recommended. Use fresh ingredients for the best flavor. Consider lining your baking dish with parchment paper for easier cleanup.
