Preparation
- Rinse the potatoes thoroughly under cold water and peel off the skin. Slice them into long strips and keep immersed in water.
- In a large pot, bring three cups of water to a boil. Add salt and drain the potato strips before adding them. Cook for about 3 to 5 minutes, then strain.
Coating & Frying
- In a mixing bowl, combine rice flour, cornflour, salt, and pepper powder. Add a little water to create a slightly thick batter.
- Coat potato pieces in the batter in batches.
- Heat oil in a deep frying pan. Fry the coated potatoes until golden brown and crispy, separating them if they stick.
Sauce Preparation
- In another pan, heat oil. Add garlic, ginger, and green chili, sautéing until golden.
- Add onions and capsicum, sautéing briefly.
- Mix in soy sauce, chili sauce, tomato sauce, and the remainder of the ingredients, allowing to boil.
- Combine the fried potatoes with the sauce and add spring onions, vinegar, if using.
Finishing Touch
- Drizzle honey and sprinkle sesame seeds over the dish and mix before serving.
Notes
For extra crispiness, let coated potatoes rest before frying. Adjust spiciness to your liking. Other vegetables can be added.
