Method

Preparation
  1. In a large bowl, combine the ground beef with baking soda and thoroughly mash it with your hands. Let the mixture sit on the counter for 20 to 25 minutes.
  2. While the beef is resting, take a small bowl and stir together the hoisin sauce, soy sauce, tomato paste, sesame oil, sugar, and crushed red pepper flakes. Mix until well combined, then set the sauce aside.
Cooking
  1. Heat the vegetable oil in a large sauté pan over medium-high heat. Once the oil is hot, add the ground beef mixture. Brown the beef, stirring frequently and breaking it into smaller pieces, until just slightly pink, about 5 minutes.
  2. Add the chopped garlic, grated ginger, and the light parts of the scallions to the pan. Continue cooking, stirring frequently, until softened, about a few minutes.
  3. Pour the reserved hoisin sauce mixture over the beef. Stir well to coat the beef and cook until everything is heated through, about 1 minute. Taste the mixture and adjust seasoning as necessary.
  4. Gently stir in the remaining dark parts of the scallions. Spoon the beef mixture over cooked rice in serving bowls.
  5. Top your Hoisin Beef Bowls with sesame seeds, chopped cashews, and a selection of shredded veggies.
