Method
Preparation of the crust
- Preheat your oven to 325°F (163°C). Line a 9-inch springform pan with parchment paper at the bottom and grease the sides.
- In a small bowl, combine the Oreo cookie crumbs and melted butter. Mix until evenly coated.
- Press this mixture firmly into the bottom and up the sides of the prepared springform pan.
- Bake the crust for about 10 minutes or until set, then let it cool completely.
- Wrap the outside of the pan with aluminum foil to prevent water from seeping in. Set aside.
Preparation of the filling
- Pour the Guinness into a medium-sized saucepan and heat on medium. Allow it to simmer and reduce to 1/2 cup, about 20 minutes. Cool it in the fridge.
- Lower the oven temperature to 300°F (148°C).
- Melt the chopped semi-sweet chocolate in a microwave-safe bowl, stirring until smooth. Let it cool slightly.
- In a large bowl, beat the cream cheese, sugar, and cocoa powder on low speed until smooth.
- Add the sour cream and vanilla extract; blend on low speed until incorporated.
- Add eggs one at a time, mixing slowly and scraping the sides.
- Incorporate the melted chocolate and cooled Guinness until smooth.
- Pour the batter into the prepared crust.
- Place the springform pan in a larger pan filled with warm water halfway up the sides. Bake for 1 hour 40 minutes.
- Turn off the oven, leaving the cheesecake inside for 30 minutes. Crack the door and cool for another 30 minutes.
- Refrigerate until firm, about 5-6 hours or overnight.
Preparation of the topping
- For the ganache, place the white chocolate chips in a heat-proof bowl.
- Heat heavy whipping cream and Baileys just until boiling and pour it over the chocolate. Let it sit, then whisk until smooth.
- Allow ganache to cool until thick but pourable, then pour over the cheesecake.
- For the whipped cream, combine cold heavy whipping cream, Guinness, cocoa powder, and powdered sugar. Whip until stiff peaks form.
- Pipe or spread the whipped cream over the cheesecake and refrigerate until serving.
Notes
To avoid cracks, ensure room temperature cream cheese and consider using a water bath for even baking. Store in an airtight container in the refrigerator for up to 5 days, or freeze slices for up to 2 months.
