Method

Preparation
  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In a large bowl, combine the crushed graham crackers and ¼ cup of granulated sugar. Mix well.
  3. Drizzle in the melted butter and mix until the combination resembles wet sand.
  4. Press this mixture evenly into the base of a 9-inch pie plate. Bake for 7 minutes or until it turns a light brown. Let it cool completely.
Make the Filling
  1. Whip the heavy whipping cream in a separate bowl until light and fluffy.
  2. In a mixing bowl, beat the room temperature cream cheese, ¾ cup granulated sugar, and lemon zest until smooth and creamy.
  3. Puree the diced strawberries until smooth, ensuring small chunks remain for texture.
  4. Add the pureed strawberries and vanilla extract to the cream cheese mixture and mix thoroughly.
  5. Gently fold in the whipped cream, being careful not to deflate it.
Assembly
  1. Pour the rich strawberry cheesecake mixture into the cooled graham cracker crust.
  2. Spread it evenly and cover with plastic wrap. Freeze for a minimum of 4 hours or until solid.
Serving
  1. Once frozen, slice the cheesecake using a knife run under hot water and dried. Serve with whipped cream and decorate with strawberries, if desired.

Notes

Make sure your cream cheese is at room temperature for easier mixing. You can substitute heavy whipping cream with half-and-half if preferred. Feel free to experiment with other fruits like raspberries or blueberries.
