Preparation
- Lay a length of cling film on a chopping board. In a small bowl, combine all the dried herbs and spices—this includes paprika, oregano, all-spice, flaky sea salt, and freshly ground black pepper—along with the lemon zest.
- Scatter half of the spice mix on the cling film. Place the chicken fillets on top, ensuring they are well-covered. Sprinkle over the remaining spice mix and cover with another layer of cling film.
- Pound lightly with a rolling pin to flatten and tenderize the chicken fillets, allowing them to absorb all the beautiful flavors.
Cooking
- Heat the olive oil in a pan over medium heat. Add the chicken fillets to the hot pan and cook for about 4-5 minutes on one side until golden brown.
- Turn the fillets over and add the torn rosemary stems and the bruised garlic clove to the pan. Continue cooking for several more minutes until the chicken is cooked through.
- Squeeze the juice of half a lemon over the chicken and deglaze the pan by adding a splash of water (approximately 40 ml should be sufficient). Turn the chicken to coat it in the pan juices, enhancing the flavor.
Serving
- Serve the Easy Greek Chicken immediately, garnished with lemon wedges for an extra citrus kick.
Notes
For an extra flavor boost, consider marinating the chicken in the spice mix and lemon juice for a few hours or overnight. This will infuse the meat with even more flavor and tenderness. Experiment with spices; adding cumin can bring in an earthy note, and cayenne pepper adds heat.
