To Serve
  • Steamed brown or white rice Comforting base to serve the chicken and sauce over.
  • 3 tablespoons chopped fresh parsley (optional) Adds a pop of color and flavor.

Method

Preparation
  1. Start by heating a large skillet over medium heat, adding the olive oil to let it warm up.
  2. Add the chopped onion and sliced mushrooms to the pan. Sauté for about 4-5 minutes until they become tender.
  3. Toss in the minced garlic and sauté for another 30 seconds.
  4. Slice the boneless chicken breast into strips and season them with kosher salt and black pepper.
Cooking
  1. Increase the heat to medium-high and add the seasoned chicken strips to the pan. Sear for 6-8 minutes, turning them once.
  2. Once the chicken is browned, add the cream cheese and chicken broth to the skillet. Stir well until the cream cheese is melted and incorporated.
  3. Sprinkle the shredded mozzarella cheese over the chicken and cover the skillet. Reduce the heat and let it cook for another 2-3 minutes.
Serving
  1. Season with additional salt and pepper to taste. Serve the chicken and mushroom mixture over a bed of steamed rice, garnishing with fresh parsley if desired.

Notes

For added flavor, consider marinating the chicken in olive oil, lemon juice, and herbs. Use a variety of mushrooms for deeper flavor. If you prefer a bit of spice, add red pepper flakes while sautéing the garlic. Store in an airtight container for up to 3 days or freeze for longer storage.
