Method
Preparation
- In a large mixing bowl, combine the cake mix and other required ingredients as per package instructions using an electric mixer.
- Using a muffin scoop, fill greased muffin tins or cupcake pans with the batter, filling each about ⅔ full.
- Place an upside-down ice cream cone on the batter in each muffin cup and gently press down.
- Preheat the oven to 350°F (175°C) and bake for 20-22 minutes until a toothpick inserted comes out clean.
- Allow cupcakes to cool on a wire rack.
Frosting and Decoration
- In a mixer, beat the softened butter on medium speed for 3 minutes. Gradually add powdered sugar, whipping cream, and vanilla extract while mixing on low. Increase to high speed and beat for 3 more minutes until fluffy.
- Frost each cupcake generously with the buttercream using an offset spatula.
- Dip the inside portion of the halved marshmallows in pink sprinkles and place two on each cupcake for ears.
- Add a pink jelly bean for the nose and two mini chocolate chips for the eyes to complete the bunny look.
Notes
Tips: Use funfetti cake mix for colorful sprinkles; dye the frosting with food coloring for added fun. Store cupcakes in an airtight container for up to 3 days or refrigerate for a week for longer storage. Consider using gluten-free cake mix for variations.
