  • 3-4 drops food coloring gel (electric pink/neon pink) For visual appeal.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the 1 cup of salted butter and 1 cup of granulated sugar for about 3-4 minutes until light and fluffy.
  3. Add the two large eggs one at a time, mixing well after each addition. Then, add the 1 teaspoon of vanilla extract and 1/2 teaspoon of almond extract. Mix until fully combined.
  4. In a separate bowl, whisk together the 3 cups of all-purpose flour and 2 teaspoons of baking powder. Gradually add this to the creamed mixture, mixing until just combined.
  5. Portion out the dough into 1/4 cup servings and roll into balls. Place on prepared baking sheets with 2 inches of space between each.
  6. Press down gently in the center of each dough ball using the back of a measuring cup or glass.
Baking
  1. Bake in the preheated oven for 9-12 minutes or until cookies are slightly puffed and no longer glossy. Allow to cool on sheets for 8-10 minutes before transferring to a cooling rack.
Frosting
  1. In a mixing bowl, beat the 1/2 cup of salted butter until smooth. Gradually mix in the 3 cups of powdered sugar, incorporating the 1 teaspoon of almond extract.
  2. Add milk, one tablespoon at a time, until the desired consistency is achieved. Stir in food coloring gel.
  3. Once cookies have cooled, spread the frosting on each cookie while still warm to achieve an ooey-gooey texture.
  4. Chill decorated cookies in the fridge before serving for an additional treat.

Notes

Use room temperature ingredients for optimal mixing. Cookie cutters can create fun shapes. Adjust milk for desired frosting consistency. Chilling dough can enhance flavor and texture.
