Method

Blind Bake the Crust
  1. Preheat your oven to 425°F. Place the crust in the freezer for about 30 minutes to firm up. Line with parchment paper or aluminum foil, fill with pie weights, and bake for 15 minutes. Remove weights and bake for an additional 5 minutes. Allow to cool completely.
Prepare the Egg Mixture
  1. In a medium bowl, whisk together the eggs, heavy cream, and milk until well combined. Season with nutmeg, salt, and white pepper.
Combine the Cheeses and Seafood
  1. Reduce oven temperature to 375°F. Mix the grated cheeses in a large bowl, fold in crab and shrimp gently to preserve texture.
Assemble the Quiche
  1. Layer the minced onions and artichoke hearts in the bottom of the cooled pie crust. Spoon the cheese and seafood mixture over top, then pour the egg mixture evenly over everything.
Bake the Quiche
  1. Place the quiche in the oven and bake for 45 to 50 minutes. It should be mostly set with a slight jiggle in the center. If edges darken, cover with aluminum foil. Allow to cool for about 10 minutes before slicing and serving.

Notes

For an extra special touch, consider adding fresh herbs like dill or chives to the egg mixture. Ensure your pie crust is crisp to hold the filling, and experiment with different cheese blends.
