Ingredients

Main Ingredients
  • 100 g unsalted butter, softened, divided The star of this recipe, bringing a rich creaminess to the butter.
  • 1 large clove garlic, finely minced Fresh garlic adds a punch of flavor, with a savory aroma that fills your kitchen.
  • 1 tbsp Dijon mustard This adds a tangy sharpness that perfectly balances the richness of the butter.
  • 1 tsp smoked paprika For that subtle smokiness, bringing warmth to the dish (you can substitute regular paprika if that's what you have).
  • 1 tsp chili flakes / red pepper flakes A hint of heat that wakes up all the other flavors.
  • 1/4 tsp cooking salt / kosher salt Essential for enhancing the taste of each ingredient (halve for table salt).

Method

Preparation
  1. Melt 1 tablespoon of butter in a small frying pan over medium heat. Allow it to foam and start bubbling, then add the finely minced garlic. Sauté for about 30 seconds while stirring, until the garlic turns very light golden. Be careful not to burn it! Remove from the heat and let it cool for about three minutes.
  2. In a small mixing bowl, add the remaining softened butter along with the Dijon mustard, smoked paprika, chili flakes, and cooking salt. Pour the sautéed garlic butter over this mixture, ensuring to include all the lovely bits of garlic. With a spatula, mix everything until it’s thoroughly combined and creamy.
Serving
  1. Spread the Cowboy Butter generously over a hot, juicy steak right off the grill, allowing it to melt beautifully. It’s also fantastic with other cooked meats, seafood, or even roasted veggies.
  2. For a fun twist, roll the mixed butter into a log using cling wrap, refrigerate it, and cut off slices as needed for a pretty presentation.

Notes

Use fresh garlic for a more robust flavor. Adjust the heat with chili flakes to your taste. Fresh herbs like parsley or chives can also be added for an aromatic touch. Store in an airtight container in the fridge for up to one week or freeze for about three months.
