Ingredients

For the filling (optional)
  • 1 cup 2% small curd cottage cheese Or 4% cottage cheese
  • ½ tsp vanilla extract
  • ½ tsp fresh lemon zest Or orange zest
  • 1 tbsp granulated sweetener of choice
For the crepes
  • 1 cup 2% small curd cottage cheese Or 4% cottage cheese
  • 6 large eggs
  • ½ cup gluten-free all-purpose flour I used King Arthur brand
  • ¼ cup Fairlife 2% milk Or milk of choice
  • 2 tbsp avocado oil Or extra virgin olive oil
  • ½ tsp vanilla extract
  • ¼ tsp salt
To top
  • Fresh berries
  • Powdered sweetener of choice

Method

Preparation of Filling
  1. In a mini food processor or blender, combine 1 cup of small curd cottage cheese, 1-2 tablespoons of your preferred sweetener, ½ teaspoon of lemon zest, and ½ teaspoon of vanilla extract. Blend until well mixed and creamy.
  2. Taste the filling and adjust the sweetness according to your preference.
Prepare the Crepe Batter
  1. In a clean blender or food processor, add 1 cup of cottage cheese, 6 large eggs, ½ cup of gluten-free all-purpose flour, ¼ cup of milk, 2 tablespoons of avocado oil, ½ teaspoon of vanilla extract, and ¼ teaspoon of salt.
  2. Blend this mixture for about one minute. Scrape the sides of the blender and blend again until the batter is smooth and free of lumps.
Cooking the Crepes
  1. Heat a non-stick skillet or a dedicated crepe pan over medium heat.
  2. Once hot, add a small amount of butter, coconut oil, or avocado oil to coat the bottom of the pan.
  3. Pour in about 1/3 cup of batter, swirling the pan to spread the batter thinly.
  4. Cook until the edges begin to lift and the bottom is lightly golden, about 2-3 minutes.
  5. Carefully flip the crepe and cook for an additional minute on the other side.
  6. Repeat this process until all the batter is used.
Assembly and Serving
  1. Spread about 2 tablespoons of your cottage cheese filling on each crepe, then fold them over.
  2. Serve immediately with fresh berries on top and a drizzle of maple syrup or a sprinkle of confectioners' sweetener.

Notes

Consider adding a pinch of cinnamon or nutmeg to the filling for enhanced flavor. For lighter batter, separate the eggs, whip the egg whites, and fold them into the batter gently before cooking. For a chocolate twist, add cocoa powder to the crepe batter.
