Ingredients

Main Ingredients
  • 5 to 6 lb first-cut (or flat-cut) beef brisket Trimmed for flavor balance.
  • 1.5 tablespoons kosher salt Essential for seasoning.
  • 1 teaspoon freshly ground black pepper Adds a subtle kick.
  • 2 tablespoons all-purpose flour Dusting for crust.
  • 3 tablespoons vegetable oil For searing.
  • 8 medium yellow onions Sweet and aromatic.
  • 3 tablespoons tomato paste Adds depth and acidity.
  • 3 cloves garlic Chopped for flavor enhancement.
  • 6 large carrots Peeled and cut into chunks.
  • 1 handful fresh chopped parsley Optional garnish.

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and set the oven rack in the middle position.
  2. Season the brisket with kosher salt and black pepper, then dust lightly with flour.
  3. Heat vegetable oil in a heavy roasting pan over medium-high heat and sear the brisket until browned, approximately 5 to 7 minutes per side.
  4. Transfer the brisket to a platter and cook the sliced onions in the same pan until softened and golden brown, about 15 minutes.
  5. Place the seared brisket on top of the softened onions, spread tomato paste over it, and arrange garlic and carrot chunks around.
  6. Cover tightly with aluminum foil or a lid and cook in the preheated oven for 1½ hours.
Cooking
  1. After 1½ hours, remove the brisket and slice it against the grain into ⅛ to ¼ inch thick slices.
  2. Return the sliced brisket back to the pan, overlapping slightly.
  3. Lower the oven temperature to 325°F (165°C) and continue cooking for an additional 1¾ to 2½ hours until fork-tender.
Serving
  1. Let the brisket rest overnight before serving for better flavor, and skim excess fat from the sauce before serving.

Notes

For extra flavor, marinate the brisket overnight. Add other vegetables or potatoes for a complete meal. Store leftovers in an airtight container for up to 3 days or freeze for 3 months.
