Method
Cooking the Vegetables
- Heat olive oil in a large pan over medium-high heat. Add the sliced onion and bell peppers, seasoning with salt. Cook for 6-7 minutes until softened and lightly caramelized.
- Add the minced garlic and spices. Stir for 1-2 minutes until fragrant. Remove from the pan and set aside.
Cooking the Chicken
- In the same pan, add more olive oil and heat. Toss in the diced chicken seasoned with spices. Cook for 6-7 minutes until golden and cooked through.
- Add minced garlic and honey, stirring until the chicken is glazed. Mix in about two-thirds of the cooked vegetables.
Making the Cheese Sauce
- Cook the macaroni until al dente, then drain.
- In a separate pot, combine the milk, cream cheese, and butter over low heat. Stir until smooth and slightly thickened. Add grated cheddar, salt, and pepper, stirring until melted.
Combining Everything
- Fold the cooked macaroni into the cheese sauce until coated. Adjust with pasta water if too thick.
- Incorporate the remaining fajita vegetables and remove from heat.
Serving
- Divide into containers. Garnish with fresh coriander or lime juice before serving.
Notes
For added flavor, marinate chicken in spices for 30 minutes. Add jalapeños for spice or use sweet bell peppers for milder. Experiment with cheeses.
