Ingredients

For the Marinade
  • ¼ cup soy sauce Adds a rich, umami flavor.
  • 3 tablespoons lime juice (from 2 limes) Brightens with citrus flavor.
  • 3 tablespoons vegetable oil Adds moisture and tenderness.
  • 1 tablespoon sugar Enhances caramelization.
  • 1 teaspoon ground cumin Provides an earthy aroma.
  • 1½ teaspoons ancho chile powder Adds depth and hint of heat.
  • 3 large cloves garlic (minced) Infuses aromatic quality.
Main Ingredients
  • 2 pounds flat iron steak Tender and flavorful.

Method

Preparation
  1. In a dish large enough to hold the steak, whisk together the soy sauce, lime juice, vegetable oil, sugar, cumin, chili powder, and garlic to create the marinade.
  2. Poke holes all over the steak on one side using a fork to allow marinade to penetrate.
  3. Place the steak in the marinade, turning to coat evenly, cover, and refrigerate for at least 4 hours, or up to 8 hours, turning the steak at least once.
Grilling
  1. Preheat the grill to high and oil the grates.
  2. Grill the steak, covered, for 5 to 6 minutes per side for medium-rare.
  3. Let the meat rest on a cutting board for about 5 minutes, tented with aluminum foil, before slicing thinly against the grain.

Notes

Use fresh ingredients for the best flavor and let the meat rest after grilling for juicier slices. Experiment with different cuts of meat if desired.
