Preparation
- Bash the fresh ginger and garlic cloves to release their essences, then transfer them to a saucepan with the chicken stock and simmer over medium heat.
- Trim and slice the spring onions. Add the spring onion whites to the simmering stock.
- In a bowl, marinate the chicken thighs with kecap manis, salt, and ground white pepper.
- Heat the neutral oil in a frying pan over high heat. Sauté the reserved spring onion greens until wilted.
- In the same pan, cook the marinated chicken thighs for about 7-8 minutes until golden brown and caramelized.
- Pour in the water from the marinade over the chicken and let it reduce to a thick sauce.
- Slice the cucumber thinly and season with salt.
- Reheat the cooked rice until fluffy and warm.
Serving
- Distribute the rice into bowls and ladle the garlic-ginger broth over the top.
- Top with the caramelized chicken and sliced cucumber.
- Drizzle with sambal and the sesame spring onion oil before serving.
Notes
For extra flavor, consider adding lime juice before serving or simmering with more aromatics like star anise.
