Method

Preparation
  1. Cook lasagna noodles according to the package instructions. Drain and rinse with cold water to prevent sticking.
  2. Preheat the oven to 350°F (175°C) and grease a 9x13 casserole dish.
Sautéing Vegetables
  1. In a large sauté pan, heat the avocado oil. Add diced carrots, celery, and onions. Cook for 6-7 minutes until softened.
  2. Add minced garlic and cook for an additional minute.
Mixing Fillings
  1. In a bowl, mix shredded chicken with buffalo sauce until well-coated. Fold in sautéed vegetables.
  2. In another bowl, combine ricotta, blue cheese dressing (or ranch), egg, and parsley. Mix well and fold in 3/4 cup mozzarella.
Assembling Lasagna
  1. Layer half of the buffalo chicken mixture in the greased casserole dish. Add a layer of noodles, then half of the ricotta mixture. Repeat with remaining ingredients, topping with remaining mozzarella.
Baking
  1. Cover with foil and bake for 40 minutes. Remove foil and broil for 4-5 minutes for a crispy top.
  2. Let the lasagna rest for 15 minutes before slicing.

Notes

For a spicier kick, use extra hot buffalo sauce or diced jalapeños. To save time, use store-bought rotisserie chicken. For a milder flavor, substitute buffalo sauce with a mild wing sauce.
