Preparation
- Toast the dried chiles guajillo and ancho on a griddle for 2-3 minutes, turning frequently.
- Transfer the toasted chiles to a bowl, add 1 cup of hot water, and soak for 5 minutes until pliable.
- Seed and devein the chiles. In a blender, combine the soaked chiles, soaking water, garlic, oregano, thyme, clove, cinnamon, beef bouillon, laurel leaves, salt, and pepper. Blend until smooth.
Cooking
- Heat oil in a large pot over medium-high heat. Season the beef with salt and pepper and sear it on all sides until browned.
- Transfer the seared beef to a slow cooker. Pour the blended chile mixture over the beef and add enough water to cover the meat.
- Cover the slow cooker and set it to low for 6-8 hours until the beef is tender.
- Remove the beef from the slow cooker, shred it with two forks, and return it to the broth.
- Serve warm with diced onions, chopped cilantro, and tortillas.
Notes
For extra flavor, marinate the beef in the blended sauce for hours or overnight. Adjust salt and pepper to taste as needed.
