Ingredients

For the preserves
  • 2.5 pounds apples (diced fine) Use a variety of firm, sweet-tart apples like Pink Lady and Granny Smith.
  • 1 cup water Can substitute with apple juice for a sweeter result.
  • 1/2 cup granulated sugar Brown sugar can be used for caramel undertones.
  • 1 tablespoon apple cider vinegar Adds brightness and balance.
  • 1 lemon juice & zest Zest adds aroma, juice brings acidity.
  • 1 teaspoon ground cinnamon (optional) Can explore other spices as well.
  • 1/2 teaspoon fine sea salt Rounds out sweetness and enhances flavors.

Method

Preparation
  1. Wash, peel, and finely dice the apples. For chunkier texture, slice apples larger.
  2. In a heavy-bottomed saucepan, combine the diced apples, water, sugar, apple cider vinegar, lemon zest, lemon juice, spices (if using), and sea salt. Stir gently to mix.
Cooking
  1. Over medium-low heat, bring the mixture to a simmer and continue cooking, stirring occasionally, for about 20-25 minutes until most of the water evaporates and the apples are soft and glossy.
  2. Prepare your canning jars by boiling them along with lids in a large water bath for 10 minutes.
  3. Carefully spoon the thickened preserves into the sterilized jars while still hot, leaving about 1/2 inch of headroom.
  4. Lower the filled jars back into the boiling water bath and process for 15-25 minutes.
  5. Remove the water bath from heat and let jars sit for an additional 5 minutes before taking them out and placing lid-side up on a clean towel.
  6. Test the lids with a towel to ensure they are tightly sealed. Let them rest undisturbed at room temperature for 8-12 hours.
  7. Label the jars with the date and contents, and store in a cool, dark place.

Notes

Feel free to customize by adding different spices or a blend of apples for varied flavors. For smaller batches, consider ensuring the best quality.
