  • 1 cup whole wheat flour Adds a nutty flavor and is packed with fiber.
  • 3 tablespoons sugar For the perfect sweet touch.
  • 1.5 teaspoons baking powder Helps the donut holes rise, making them light and airy.
  • 0.5 teaspoon cinnamon Adds a warm, inviting aroma.
  • 0.5 teaspoon kosher salt Enhances the flavors.
  • 1 cup milk Moistens the dough.
  • 1 large egg Acts as a binder.
  • 1 teaspoon vanilla For aromatic essence.
  • 0.25 cup unsalted butter (melted) Adds richness and flavor.
  • 2 quarts vegetable oil (for frying) Essential for frying.
For the Glaze
  • 2 cups powdered sugar To create a luscious glaze.
  • 2 tablespoons milk To adjust the consistency of the glaze.
  • 1 tablespoon maple syrup Adds natural sweetness to the glaze.

Method

Preparation
  1. Heat the vegetable oil in a large skillet or pot over medium heat until it reaches 350 degrees F.
  2. In a medium bowl, stir together the all-purpose flour, whole wheat flour, baking powder, cinnamon, sugar, and kosher salt until well combined.
  3. In a separate bowl, whisk together the egg, milk, and vanilla.
  4. Slowly pour the wet ingredients into the dry mixture, stirring just until combined. Stir in the melted butter until the dough is mostly smooth.
  5. Dust a clean surface with flour and scoop the donut dough onto it. Press it out into a ¼-inch thick layer.
  6. Using a small round cookie cutter, punch out holes from the dough.
Cooking
  1. Carefully drop the donut hole rounds into the hot oil in batches. Fry for about 90 seconds on each side or until golden brown.
  2. Remove the donut holes with a slotted spoon and let them drain on a plate lined with paper towels.
Glazing
  1. In a small bowl, whisk together the powdered sugar, milk, and maple syrup until smooth.
  2. Dunk each warm donut hole into the glaze, allowing excess to drip off, then let cool slightly to let the glaze set.

Notes

Use a candy thermometer to monitor the oil temperature. Don’t skip the glaze, it elevates the flavor. Adjust sweetness by modifying the amount of powdered sugar.
